To make the zoodles, prepare the zucchini by cutting off both ends. use a spiralizer to create zucchini noodles or cut the zucchini into thin, long julienne strips.
Toss the zucchini noodles with a few teaspoons of olive oil, lemon juice, salt, and pepper. set aside.
For the sauce, pressure cook the scored tomatoes with 1 cup of water for 1 whistle. once cooled, blend the tomatoes into a smooth paste.
In a saucepan, saut„© chopped garlic and onions until translucent. add the tomato paste, basil leaves, oregano, cumin powder, honey, red chilli powder, pepper, and salt. cook until the sauce turns dark reddish.
Stir in 1 cup of water and chopped mushrooms. cook for an additional 20 minutes. set aside.
