Begin by washing the arugula leaves thoroughly to ensure they are clean.
In a mixing bowl, combine the watermelon cubes with the arugula leaves and refrigerate the mixture to keep it chilled.
For the zesty dressing, take a small mixing bowl and whisk together the extra virgin olive oil, red wine vinegar, honey, salt, black pepper powder, and hot sauce.
Chill the dressing in the refrigerator as well.
Just before serving, toss the watermelon and arugula salad with the feta cheese and the prepared zesty dressing.
