To create the refreshing lentil and herb salad, start by thoroughly rinsing the whole green lentils (masoor dal) under cold running water until the water runs clear.
In a wide pan, bring enough water to a boil and add a pinch of salt. add the rinsed lentils to the boiling water and cook until they reach the desired texture. keep tasting occasionally to achieve the ideal tenderness. once cooked, drain the lentils and allow them to cool in the refrigerator.
In a spacious salad bowl, combine the cooked and cooled lentils with finely chopped cucumber, halved cherry tomatoes, fresh parsley, and mint leaves.
Gently mix the ingredients to distribute them evenly.
Drizzle the salad with extra virgin olive oil for a delightful flavor and moisture.
