To start making the tangy mango onion relish (kanda kairichi chutney), ensure all the ingredients are ready.
In a food processor or mixer-jar, combine raw mango, onion, organic jaggery, roasted peanuts, red chilli flakes, and a pinch of salt. grind the mixture into a smooth paste, adding a little water as needed.
In a tadka pan, heat a small amount of sunflower oil over medium flame.
Add the mustard seeds and allow them to crackle. once they start popping, add the cumin seeds and let them sizzle for a few moments.
Remove the tadka pan from the heat after the cumin seeds have sizzled and add the asafoetida. give it a quick stir.
