To prepare the coconut milk okra stew, wash and trim the ends of the okra. cut them into bite-sized pieces. set aside.
Finely chop the onion, green chillies, and ginger.
Heat coconut oil in a pan over medium heat. add mustard seeds and let them splutter.
Add the curry leaves, chopped onion, green chillies, and ginger. saute until the onions turn translucent.
