Wash and peel the sweet potatoes. slice them into rounds approximately 1/2 inch thick. set aside.
In a bowl, combine breadcrumbs, 1/3 teaspoon of salt, and 1/6 teaspoon of black pepper. mix well.
In another bowl, mix all-purpose flour, corn starch, 1/3 teaspoon of salt, and 1/6 teaspoon of black pepper. slowly add water to make a thick batter. approximately 1/4 cup of water should be enough.
Line an air fryer baking tray with parchment paper and lightly grease the parchment paper with oil.
Dip each sweet potato slice into the flour batter, ensuring it is fully coated, then coat it with the breadcrumb mixture. shake off any excess breading and place the coated sweet potato slices on the prepared baking tray. repeat this process for all the sweet potato slices.
