In a dutch oven, heat olive oil over medium-high heat. add sweet potato and onion, and cook while stirring frequently until the onion starts to soften, approximately 4 minutes.
Stir in garlic, chili powder, cumin, chipotle pepper, and salt. cook, stirring constantly, for about 30 seconds.
Pour in water and bring the mixture to a simmer. cover the pot, reduce the heat to maintain a gentle simmer, and cook until the sweet potato becomes tender, which takes about 10 to 12 minutes.
Add black beans, tomatoes, and lime juice. increase the heat to high and bring the stew back to a simmer, stirring frequently. once simmering, reduce the heat and let it simmer for about 5 minutes until the liquid slightly reduces.
Remove the pot from the heat and stir in the fresh cilantro.
