Prepare the fiery paneer filling: begin by making the flavorful filling for the fiery paneer momos. in a mixing bowl, combine soy sauce, sriracha sauce, and tomato ketchup. mix well and set aside.
Saute the aromatics: heat sunflower oil in a wok over high heat. add minced garlic, grated ginger, finely chopped green chillies, and spring onion bulbs. saute for about 30 seconds until aromatic.
Add bell pepper: stir in finely chopped green bell pepper and cook until tender.
Combine with sauce: lower the heat to medium and pour in the prepared sauce mixture. cook for a few minutes until the sauce thickens slightly.
Add paneer and garnish: add the cubed cottage cheese (paneer) to the wok. turn the heat to high and stir-fry for a couple of minutes until the paneer is well coated with the spicy sauce. garnish with chopped spring onion greens and set the mixture aside to cool.
