To prepare the spicy mint cheese paratha, combine the grated cheese, finely chopped green chillies, onions, and fresh mint leaves in a mixing bowl. add cumin powder and mix everything thoroughly. set the mixture aside.

Now, let's make the dough for the paratha. take the whole wheat flour in a mixing bowl, add nigella seeds and a pinch of salt to taste. gradually add water and knead the mixture until you achieve a smooth and pliable dough. divide the dough into large lemon-sized portions and set them aside.

Take one portion of the dough, dust it with flour, and roll it out into a circle with a diameter of about 3 inches.

Place a generous tablespoon of the prepared spicy cheese filling in the center of the rolled-out dough.

Gather the edges of the dough and bring them together to seal the filling securely.
