To prepare the spicy chicken and cheese quesadilla, start by making the filling. in a mixing bowl, combine corn flour with 1/4 cup of water to create a paste.
To the corn flour paste, add soy sauce, tomato ketchup, red chilli sauce, and a pinch of salt. mix well to create the base sauce. set it aside.
Heat a teaspoon of sunflower oil in a wok or pan over high heat. add garlic, ginger, green chillies, and spring onions. stir-fry for about 30 seconds.
Add the chicken strips and sliced green capsicum to the wok. cook on medium heat until the capsicum is tender, and the chicken is fully cooked.
Pour the prepared base sauce into the wok with the chicken and capsicum. stir well and cook for a few minutes until the sauce thickens and coats the chicken and vegetables evenly.
