To begin making the spicy lemon-mint rice recipe, first, wash the basmati rice thoroughly and soak it in water for about 30 minutes.

Drain the soaked rice and cook it with 2 cups of water along with a little salt and turmeric powder. once the rice is cooked, fluff it with a fork and set it aside to cool.

While the rice is cooling, prepare the mint-masala mixture. wash the mint leaves thoroughly.

Using a mixer grinder, grind the mint leaves and green chillies into a smooth paste. add lemon juice to the paste and mix well.

In a large pan or kadhai, heat sunflower oil. add mustard seeds and cumin seeds. allow them to crackle.
