In a bowl, crack open the eggs. season with salt and black pepper, and whisk the mixture well to combine.
Heat oil in a non-stick frying pan over medium heat. pour half of the egg mixture into the pan and spread it out evenly.
Place four slices of bread over the egg mixture. pour the remaining half of the egg mixture over the bread slices and spread it evenly. allow the bottom side of the omelette to cook for a few minutes.
Flip the omelette over and let the other side cook. while the second side is cooking, spread a generous amount of schezwan sauce over the bread slices.
Place cheese slices over the schezwan sauce and fold the omelette over like a sandwich. flip it again and cook until the cheese melts.
