Begin by preparing the fenugreek leaves for the paratha. place the fenugreek leaves in a bowl filled with water to which 1/2 teaspoon baking soda and 1 tablespoon vinegar have been added.
Soak the leaves in this solution for about 2 to 3 minutes, then drain all the water.
Rinse the leaves under clean water for a couple of minutes, gently swishing and moving them with your fingers to remove any soil or mud particles. drain the water again and pat the leaves dry using a kitchen towel.
In a mixing bowl, combine the wheat flour and salt.
Add the finely chopped fenugreek leaves, green chilies, minced garlic, and ghee to the bowl. mix well to incorporate the ingredients.
