To prepare the spicy kidney bean delight, start by soaking the kidney beans (rajma) overnight. then, pressure cook the soaked rajma with water for about 5 to 6 whistles until they become tender.
Once the beans are cooked, release the pressure naturally and let them simmer for an additional 20 minutes on low heat.
Drain any excess water from the cooked rajma and set them aside.
In a mixing bowl, combine the cooked kidney beans with finely chopped onions, ripe tomatoes, and assorted colored bell peppers for a vibrant touch.
Add the chaat masala, freshly squeezed lime juice, and a handful of chopped cilantro leaves to the bowl. toss all the ingredients together until they are well combined.
