Preheat the oven to 425 degrees f (220 degrees c). line a large baking sheet with parchment paper.
Place the cauliflower in a food processor and process until it is finely grated. transfer the grated cauliflower to a microwave-safe bowl. loosely cover the bowl and microwave on high for 3 minutes. allow it to cool slightly. then, transfer the cauliflower to a clean kitchen towel and wring out any excess moisture. return it to the bowl and stir in the cheddar cheese, egg, and salt until well combined.
Place a 3-inch biscuit cutter on the prepared baking sheet. fill the cutter with approximately 1/4 cup of the cauliflower batter, gently patting it down inside the mold. repeat this process with the remaining batter, leaving about 1 inch of space between each muffin. you should end up with 8 muffins.
Bake the muffins in the preheated oven for about 25 minutes, or until they are browned and crispy around the edges.
Once baked, you can serve these delicious cheesy cauliflower muffins with your favorite toppings or use them to make a tasty breakfast sandwich.
