Before handling the raw jackfruit, spread 2-3 newspapers on your work surface and grease both your hands generously with sesame oil or use gloves. also, grease the knife with oil. this is necessary because the jackfruit releases a sticky substance when cut, which can be difficult to clean. halve the jackfruit.
Take one half and remove the thorny green skin. remove the thick center stalk as well and chop the jackfruit into small pieces.
Prepare a bowl of water with buttermilk to immerse the chopped jackfruit. alternatively, you can use the drained water from washing rice. boil water with salt and turmeric, and cook the finely chopped jackfruit until it becomes soft, which should take about 15 minutes.
