To initiate the preparation of fragrant spiced fish curry, ensure the fresh fish fillets are thoroughly washed, pat them dry, and marinate with lemon juice, turmeric, and salt.
Allow the fillets to drain excess water and any unwanted odors by placing them in a colander for 10-15 minutes.
Once drained, transfer the marinated fillets to a bowl and set them aside.
In a deep wok or kadai, heat approximately one ladle of mustard oil until it reaches a smoking point. gently add the fish fillets to the hot oil.
Fry the fish fillets from both sides until they achieve a golden hue.
