To prepare the spiced chickpea flour pancakes, preheat a non-stick griddle/tava on low heat.
While the griddle heats up, prepare the batter.
In a mixing bowl, sieve the chickpea flour to remove any lumps.
Add ginger-garlic paste, ajwain, asafoetida, turmeric powder, baking soda, finely chopped onion, tomato, green chillies, coriander leaves, and salt to the bowl. mix well to combine.
If using coconut milk (or soy or almond milk), stir it into the batter. alternatively, add enough water to make a smooth and spreadable batter, but not too watery.
