To create the spiced banana pancakes, begin by dissolving palm jaggery in 1/4 cup of water over low heat in a saucepan.
Mash the ripe bananas in a bowl and add dry ginger powder, cardamom powder, and the dissolved palm jaggery along with the water used for dissolving.
Mix the ingredients well to form a thick pancake batter consistency. add an additional 1/2 cup of water to achieve the desired texture.
Heat a nonstick pan and grease it with a small amount of ghee.
Pour a ladleful of the prepared batter onto the hot pan and spread it slightly. cook for about 2 minutes on each side until golden brown and crisp.
