In a bowl, combine the chickpea flour (besan), yogurt, and 1/2 cup of water.
Using a hand mixer, blend the chickpea flour and yogurt mixture for a minute until well combined. gradually add 5 cups of water, mixing continuously to ensure there are no lumps.
Heat 1 tablespoon of oil in a large saucepan over medium heat. add fenugreek seeds and asafoetida. fry them for about 2 minutes or until the fenugreek seeds turn brown. add the dry red chilies and fry for less than a minute until they become brown.
Pour the besan and yogurt mixture into the saucepan. add turmeric powder and salt. immediately start stirring with a serving spoon to prevent lumps from forming. increase the heat to medium-high.
After 5 to 6 minutes, the besan mixture will start boiling and thicken slightly. add 3 more cups of water and continue cooking. reduce the heat to medium-low and stir periodically.
