In a bowl, place two-thirds of the chickpeas and add curry powder, cumin seeds, minced garlic, lemon zest, lemon juice, eggs, and milk. use a hand blender to blend until smooth. stir in the remaining chickpeas, chopped coriander, and finely chopped red chilli.
Heat rapeseed oil in a non-stick frying pan. pour the blended chickpea mixture into the pan and spread it evenly. cook over low heat for about 5 minutes until the cake is set. transfer the cake onto a baking sheet lined with parchment paper, then gently slide it back into the pan to cook the other side for about 3 minutes.
While the chickpea cake is cooking, prepare the tangy tomato sambal. mix finely diced red onion, diced tomatoes, sliced cucumber, finely chopped red chilli, chopped coriander, and lemon juice in a bowl.
Once the chickpea cake is cooked on both sides, transfer it to a serving plate. top the cake with the tangy tomato sambal and garnish with a few coriander leaves. cut the cake into wedges and serve.
