Preheat the air fryer to 400ÔøΩf (200ÔøΩc). in a large bowl, combine the cauliflower, coconut oil, grated ginger root, minced garlic cloves, garam masala, salt, and pepper. toss well to coat the cauliflower. place the cauliflower in a single layer in the greased air fryer basket. cook until the cauliflower is browned and crisp-tender, turning once, for about 8-10 minutes. repeat in batches if necessary.
Meanwhile, in a large skillet, heat the olive oil over medium-high heat. add the onion and cook, stirring frequently, until tender for about 4-5 minutes. add the grated ginger, minced garlic cloves, garam masala, curry powder, and cayenne pepper (if desired). cook for an additional 1 minute.
Stir in the tomatoes, coconut milk, salt, and pepper. bring the mixture to a boil, then reduce the heat and let it simmer uncovered until thickened for about 10-12 minutes, stirring occasionally.
Once the sauce has thickened, stir in the cooked cauliflower until well coated. sprinkle with chopped cilantro.
If desired, serve the vegan spiced cauliflower with rice, naan bread, and lime wedges for an extra burst of flavor.
