To prepare the kashmiri brinjal curry, start by washing and cutting the brinjals into medium-sized pieces. also, chop the tomatoes and keep them aside.

Heat sunflower oil in a pan and add cumin seeds. allow them to splutter.

Now, add asafoetida (hing) and turmeric powder (haldi) to the pan. stir for a few seconds.

Add the chopped tomatoes to the pan and saute them until they turn soft and mushy.

Once the tomatoes are cooked, add the dry ginger powder and kashmiri red chilli powder to the pan. mix well to combine the spices with the tomatoes.
