To begin making spiced beetroot chicken cutlets, heat 3-4 cups of water in a deep-bottomed saucepan. add salt and black pepper and bring it to a boil.
Add the chicken to the boiling water and cook it for about 20 minutes or until the chicken is fully cooked.
While the chicken is cooking, mash the potato in a mixing bowl until no lumps are present. grate the cooked beetroot into the bowl.
Once the chicken is cooked, drain the water and let it cool. once cooled, shred the chicken.
Mix the shredded chicken, mashed potato, grated beetroot, chopped coriander leaves, curry leaves, green chillies, ginger-garlic paste, cumin seeds, red chilli powder, and garam masala in the bowl.
