Rinse the rice thoroughly and soak it in water for at least 30 minutes. drain the water and set the rice aside.
Dry roast the cardamom, cloves, black cardamom, mace, nutmeg, cinnamon, shahi jeera, and saunf in a pan for 2 minutes. remove from heat and let them cool slightly. grind the roasted spices into a powder and store it in an airtight container.
Marinate the chicken with salt, ginger garlic paste, turmeric, red chilli powder, biryani masala, mint leaves, chopped coriander, green chillies, kewra water, and curd. mix well and set the marinated chicken aside.
Heat ghee in a large pressure cooker and add bay leaves. add sliced onions and cook until they turn brown. now, add the marinated chicken and cook on high flame until the chicken is partially cooked.
Add 3 cups of water to the chicken and bring it to a boil. add the soaked and drained rice to the pressure cooker and gently stir. taste the dish to check for saltiness, as the rice will absorb excess salt during cooking, resulting in perfect seasoning.
