Start by preparing the spice mix for the spiced chicken salna. heat a small kadai with oil over medium flame and add fennel seeds, black peppercorns, cinnamon stick, cloves, and star anise. roast them for 30 seconds until they release their aroma.

Now, add 1/2 cup of fresh coconut to the kadai and roast until it turns slightly brown. this roasting process will take about 5-7 minutes.

Turn off the flame and set the roasted ingredients aside to cool.

Once cooled, transfer the roasted masala into a mixer-jar and grind it into a smooth paste by adding a little water.

In the same kadai, heat some oil over medium flame and add the chicken pieces, turmeric, and salt. saute until the chicken turns golden brown. be careful not to overcook the chicken.
