To prepare the spiced beetroot and sweet potato cutlets, start by boiling the sweet potatoes in a pressure cooker. once boiled, peel off the skin and mash them. set aside.
Dry roast the rolled oats in a wide pan and keep them aside.
In a large mixing bowl, combine grated beetroot, boiled and mashed sweet potatoes, roasted oatmeal, sweet corn kernels, finely chopped green chillies, chopped coriander leaves, grated ginger, red chilli powder, dry mango powder, cumin powder, and black salt. mix everything well.
Add half of the bread crumbs to the mixture and mix again until everything is well combined.
Divide the mixture into equal portions and shape them into oval flat cutlets or any desired shape.
