How To Cook?

Pick the coriander leaves and set them aside. finely slice the stalks.

Heat 1 tablespoon of oil in a heavy-bottomed pan over medium heat. add the chopped garlic and sliced coriander stalks. fry until they become brown.

Add the black beans and cooked rice to the pan. mix well and cook for a minute.

Remove from heat and add the reserved coriander leaves. mix everything together.

For the salsa, toss together chopped tomatoes, onions, spring onions, lemon juice, and coriander leaves. season to taste.
