Place the red onion in a medium bowl and cover it with cold water. set it aside.

In a mini food processor, combine the avocado, cilantro, lime juice, extra virgin olive oil, garlic, and salt. process the mixture, scraping down the sides as needed, until it becomes smooth and creamy.

Just before serving, combine the mixed salad greens, corn, tomatoes, and black beans in a large bowl.

Drain the red onions and add them to the bowl, along with the creamy avocado dressing. toss the ingredients together to coat them evenly.
