To begin making lemon herb potato pancakes, peel the potatoes and place them in a bowl of water to prevent browning.
Using the grater attachment of a food processor, grate the potatoes and transfer them to a medium bowl.
Add lemon juice and finely chopped onions to the grated potatoes. mix well to coat the potatoes evenly. let it sit for about 10 minutes.
Drain the potatoes and squeeze out any excess liquid using a muslin cloth or a metal sieve.
In a large mixing bowl, combine the squeezed potatoes, minced garlic, beaten egg, all-purpose flour, bread crumbs, chopped parsley, and chopped chives.
