To make healthy veggie semolina pancakes, start by mixing semolina (sooji), wheat flour (atta), orange puree, carom seeds, and a pinch of salt in a large mixing bowl.
Gradually add water to this mixture while stirring continuously to create a thick batter. ensure there are no lumps in the batter.
Now, add fresh peas, turmeric powder, dry mango powder, fennel seeds, and garam masala to the batter. mix everything together and set it aside.
In a small pan, heat a little oil. when it's slightly hot, add mustard seeds, chana dal, curry leaves, and chili flakes. allow them to sizzle for a few seconds, then remove from heat.
Add this tempering to the semolina batter and mix it well. the batter should have a thick but pourable consistency.
