In a mixing bowl, mash the ripe bananas until smooth. stir in the brown sugar, salt, and sunflower oil.
Add the plain flour, baking powder, and ground cinnamon to the banana mixture. mix thoroughly until well combined. the batter should have a thick, droppable consistency.
Create a well in the center of the batter and gradually whisk in plant-based milk, adding it gradually until the batter reaches the desired consistency.
Heat a little oil in a frying pan over medium heat. spoon about 2 tablespoons of the batter into the pan to make american-style pancakes. you can cook around 4-5 pancakes at a time, depending on the size of your pan.
Fry the pancakes for 2-3 minutes on each side until golden brown.
