In a bowl, marinate the fish fillets with salt, black pepper, and lemon juice. allow them to marinate for a while.
Heat a griddle pan and add butter or olive oil. grill the marinated fish fillets for 3-4 minutes on each side over medium-high heat. ensure they are cooked evenly. set aside.
In the same pan, add the chopped vegetables - asparagus, carrots, and green beans. saute them for 2-3 minutes until they become tender yet crisp.
Meanwhile, grill the ripe tomatoes separately and keep them aside.
To serve, place the grilled fish fillets on a bed of sauted vegetables. top the dish with grilled tomatoes.
