To prepare the cucumber and spice pancakes, in a large mixing bowl, combine besan, wheat flour, rice flour, grated cucumber, turmeric powder, cumin powder, coriander powder, red chilli powder, minced garlic, coriander leaves, and salt. mix well.
Gradually add a little water at a time to make a smooth and firm dough. the cucumber will release water when combined with salt, so be cautious while adding water.
Allow the dough to rest for 5 minutes.
Divide the dough into 4 portions.
Preheat a skillet or tawa over medium heat.
