To prepare the chettinad sweet lentil pancakes (kandarappam), begin by soaking the rice and dals separately in water for approximately 4 hours.
After soaking, drain the excess water from the rice and dals. grind them individually into fine pastes using a mixer, adding the necessary amount of water.
Incorporate grated jaggery and fresh coconut into the ground paste, and grind everything together to form a smooth batter.
The batter should have a consistency akin to that of dosa batter.
Introduce cardamom powder and a pinch of salt to the batter, ensuring they are thoroughly mixed.
