To start preparing the modified kerala style vendakka uppadan, soak the tamarind pulp in lukewarm water in a bowl for about 10 minutes. then, extract the juice from the tamarind and set it aside.

Meanwhile, dry roast the fenugreek seeds, brown rice, and red chilies in a shallow fry pan until fragrant. once done, grind these roasted ingredients into a coarse mixture using a mixer grinder and keep it aside.

In the same shallow fry pan, heat coconut oil over medium flame. add mustard seeds and let them crackle, followed by adding asafoetida and curry leaves. allow them to crackle as well.

Add the sliced ladies' fingers (okra) to the pan and saute for a few minutes until the sliminess reduces.

Pour the tamarind extract and a cup of water into the pan, and add turmeric powder and salt. let the okra cook with the lid closed for approximately 3-4 minutes.
