Heat ghee in a heavy-bottomed pot. add cumin seeds, coriander seeds, fenugreek seeds, black cardamom, cloves, and organic cinnamon. saute until aromatic.
Add finely chopped onion, green chillies, and minced ginger. cook until the onion turns golden brown.
Stir in turmeric powder (haldi), dried mango powder (amchur powder), black salt (kala namak), and a pinch of salt.
Add the mutton pieces and sear them until they turn brown on all sides.
Pour enough water to cover the meat, and bring it to a boil. then, cover the pot and let the meat simmer on low heat for about 1.5 to 2 hours, until it becomes tender.
