To start preparing fragrant thai massaman chicken curry, first heat a pan over medium heat. add fennel seeds, coriander seeds, black peppercorns, cinnamon, cardamom pods, and dried red chillies (listed under massaman curry paste). dry roast the spices for about a minute until fragrant. transfer the roasted spices to a bowl.
In the same pan, add shallots, ginger, garlic, and lemongrass (listed under massaman curry paste). roast until the ingredients turn light brown in color. remove them from the pan and place them in another bowl.
Allow the roasted ingredients to cool down and then grind them into a smooth paste using a mixer grinder. add a little water if needed to achieve the desired consistency.
In a wok, heat sunflower oil and add the freshly ground massaman curry paste. stir for about a minute to release the flavors.
Add the chicken thighs and diced vegetables (baby potatoes and carrot) to the wok and give it a good stir.
