To prepare the fragrant jackfruit seed curry, grind the roasted poppy seeds and coconut with water until you have a smooth paste. set this korma masala aside.
Begin by boiling the jackfruit seeds in water for about 20 minutes. once boiled, drain the water and peel off the outer white layer. cut the seeds in half and set aside.
In a pressure cooker, heat some oil over medium flame. add fennel seeds, stone flower, star anise, organic cinnamon, cardamom pods, and bay leaves. saut„© for about 10 seconds until aromatic.
Introduce sliced onions, ginger, garlic, and green chilli to the cooker. saut„© for approximately 5 minutes until the onions become translucent.
Incorporate the korma masala along with red chilli powder, turmeric powder, garam masala, coriander powder, and salt. mix the spices well and saut„© for an additional 5 minutes.
