To begin making assamese fish curry with curry leaves gravy, clean the fish, remove the stomach contents, and gills. if using larger fish like sardines, halve them.
Marinate the fish with turmeric powder and salt.
In a shallow frying pan, heat mustard oil on medium heat until it is close to its smoking point (till fumes arise from the oil). note: if you are using cooking oil other than mustard oil, do not allow the oil to come to the smoking point.
Ensure that the pan is uniformly greased with oil to prevent the fish from sticking to the pan.
Shallow fry the fish on the pan until they are cooked and tender. once done, switch off the heat.
