Soak the rice paper wrappers in water for approximately 10 seconds until they become soft and pliable. remove them from the water and place them on a clean, dry working board.
Take a lettuce leaf and place it on one end of the rice paper wrapper. arrange the julienned vegetables, sprouts, and herbs on top of the lettuce leaf.
Fold the sides of the rice paper wrapper over the filling, then roll it up tightly, similar to wrapping a burrito or roll.
Repeat this process for the remaining rice paper wrappers and filling ingredients.
Serve the veggie spring rolls as is or with a dipping sauce of your choice.
