Cook the noodles according to the package instructions. boil them in hot water until al dente. once cooked, drain and rinse the noodles thoroughly. set them aside.
Chop the vegetables into thin, long strips or matchsticks. shred the cabbage and carrots. slice the green bell pepper (capsicum) into thin strips or matchsticks. thinly slice the french beans or finely chop them. you can use a food processor to speed up the chopping process.
Heat oil in a wok or frying pan over medium heat. add the white parts of the spring onion and stir.
Add all the chopped vegetables and increase the heat to high. stir-fry the vegetables for 4 to 5 minutes. if the heat becomes too high, reduce it and continue stir-frying.
Add crushed black pepper, finely chopped celery (optional), and soy sauce. adjust the amount of black pepper and soy sauce according to your taste.
