To prepare the carrot and paneer stuffed whole wheat paratha, start by making the dough. in a large bowl, combine the whole wheat flour and 1/2 teaspoon of salt.
Gradually add water, a little at a time, and knead until you have a firm and smooth dough. knead for about 3 to 4 minutes to ensure soft parathas.
Drizzle 1 teaspoon of sunflower oil over the dough and knead for another couple of minutes. cover the dough and set it aside while you prepare the stuffing.
For the stuffing, combine the cottage cheese (paneer), grated carrots, finely chopped onions, green chilies, cumin powder, fresh mint leaves, and salt in a mixing bowl. mix everything well.
We'll use raw grated carrots as the stuffing since they will cook while the parathas are being cooked.
