To make the dough for paneer methi paratha, mix wheat flour and salt in a large bowl. gradually add water and knead to make a soft, pliable dough.
Knead the dough for a couple of minutes until it becomes smooth and elastic. add a teaspoon of oil and knead again until the dough is soft and non-sticky.
Divide the dough into 14 to 16 equal portions, cover, and let it rest.
In a separate bowl, crumble the cottage cheese (paneer) using your fingers or a fork.
Add chopped onion, chopped methi leaves, finely chopped green chillies, cumin powder, and salt to the crumbled paneer. mix all the ingredients well.
