To prepare the black eyed beans and lentil sambar, wash the arhar dal (pigeon pea) thoroughly and cook it in a pressure cooker with 1/4 teaspoon of turmeric powder and enough water for three whistles. set it aside to release the pressure.
In a separate large pot, bring 3 cups of water to a boil. add the black-eyed beans and 1/4 teaspoon of turmeric powder to the boiling water. cook the beans until they become soft and tender. drain the excess water and keep the cooked beans aside.
Heat a medium-sized pan on the stove over medium heat and add oil.
Once the oil is hot, add the tempering ingredients: asafoetida, red chillies, fenugreek seeds, mustard seeds, and urad dal. fry them for a few seconds until the mustard seeds splutter and the urad dal turns golden.
Add chopped onions and tomatoes to the pan and saute until the onions become soft and translucent.
