To begin making the black eyed beans & drumstick masala, first, soak the black-eyed beans in water for a few hours or overnight. drain the water and rinse the beans thoroughly.
In a pressure cooker, add the soaked black-eyed beans with enough water and a pinch of salt. pressure cook for about 3-4 whistles or until the beans are soft and cooked.
In a separate pan, heat some oil and add the chopped onions and garlic pieces. saute until the onions turn translucent.
Now, add the organic cinnamon, cloves, elaichi (cardamom), and black pepper to the pan. stir for a minute until the spices release their aroma.
Add the chopped drumstick (moringa) to the pan and saute for a few more minutes.
