To prepare parsi style caramelized onion rice, start by washing the basmati rice in cold water until the water runs clear. soak the rice in water for about 30 minutes, and then drain.
Heat ghee in a heavy-bottomed pan or pressure cooker over medium heat. add cardamom pods, cloves, and a cinnamon stick. allow the spices to sizzle and release their aroma.
Add the sliced onions to the pan and saut„© them until they turn deep brown and caramelized. this should take about 10 minutes on medium heat.
Once the onions have caramelized, add the drained basmati rice to the pan. stir well to combine the rice with the caramelized onions and spices.
Pour in 2 cups of water and season with salt according to your taste. stir everything together.
