Heat oil in a non-stick pan. add cumin seeds and Saute for half a minute. then, add bay leaves and black peppercorns and mix well.
Add lemon pickle to the pan, mix it with the spices, and Saute for a minute. add salt, basmati rice, green capsicum, red capsicum, yellow capsicum, and paneer cubes. toss everything together until well combined. cover the pan and cook on low heat for 2-3 minutes, allowing the flavors to meld together.
Garnish the lemon pickle rice with paneer and mixed capsicums with a sprig of fresh coriander. serve it hot and enjoy!
