Prep the ingredients: clean and slice the fresh button mushrooms into cubes. if using fresh corn, remove the kernels from the cob. dice the onion, red bell peppers, and green chillies. grate the ginger and finely chop the garlic cloves.
Saute the aromatics: in a pan, heat the sunflower oil over medium heat. add the grated ginger and chopped garlic. saute until aromatic and slightly golden.
Onion and peppers: add the diced onion and red bell peppers to the pan. cook until they become tender and the edges are slightly caramelized.
Spice it up: stir in the turmeric powder, red chilli powder, cumin powder, and ground coriander. these spices will infuse the dish with a rich flavor and warm color.
Mushrooms and corn: add the sliced mushrooms and sweet corn kernels to the pan. gently toss the ingredients to combine, allowing the mushrooms to cook and release their moisture.
