In a large mixing bowl, knead the minced lamb for 4-5 minutes to even out the texture and make it slightly sticky for better binding. add garam masala, finely chopped onion, garlic paste, ginger paste, and chilli paste. mix well. then, add chopped coriander leaves, mint leaves, and salt. mix everything thoroughly and let it marinate for at least an hour, preferably overnight.
Soak the slice of bread in water for 5 minutes. squeeze out as much water as possible, break the bread into pieces, and add it to the marinated minced lamb. mix well to ensure there are no lumps of bread. the bread acts as a binder for the cutlets.
Heat oil in a frying pan over medium heat, making sure it comes up about halfway up the side of the pan. place breadcrumbs in a bowl. in a separate bowl, lightly whisk the eggs. divide the lamb mixture into 12 portions and slightly flatten each portion.
Roll each lamb cutlet in the breadcrumbs, then dip it in the beaten egg, and carefully place it in the hot oil. fry the cutlets in batches for 3-4 minutes on each side until they turn a light brown color. be cautious as they may splutter slightly. once cooked, drain the cutlets on kitchen paper to remove excess oil.
Serve the flavorful and spicy lamb cutlets with chutney and naan for a delicious meal or appetizer.
